Paleo Chicken Salad Cucumber Cups
From Edible Harmony

1 1/2 cups of cooked boneless chicken or turkey
1/4 cup of mayo
2-3 tbsp of chipped chives or fresh dill
2 tbsp of lemon juice
1 tablespoon of Dijon mustard
Salt and pepper to taste
5 or 6 cucumbers (peeled or unpeeled)
Paprika to sprinkle on top (optional)

Paleo Apple Berry Crumble from Fast Paleo
Ingredients
4 green apples, peeled, cored and sliced thinly
1 cup of berries (we love blueberries and raspberries)
1 tbs raw honey
1/4 cup of coconut oil
1 cup almond meal
1 cup shredded coconut
1 tbs cinnamon (the more the merrier)
2 tsp natural sweetener (like natvia or stevia)
1 cup roasted unsalted nuts and seeds (try a mix of almonds, pumpkin seeds and sunflower kernels)
Preheat oven to 180 degrees celsius. Grease your baking dish (we used a 25 x 25 cm). Neatly layer your apple slices, overlapping the pieces. Drizzle the apple with raw honey. Evenly spread the berries over the apple. Now for the crumble! In a bowl, mix the almond meal, coconut, cinnamon, sweetener and nuts. Stir the coconut oil through your crumble mix. Now spread the crumble mix over the apples, don’t make it too neat, crumbles are meant to look a little messy! Bake in the oven for 30-35 minutes or until your crumble is golden brown.

I’d always heard rumors of people making their own almond milk but I assumed it was a super difficult process. I was pleasantly surprised when I finally built up the courage to make it. It’s really easy, and oddly fun.

To make Raw Almond Milk:

What you’ll need:

1 cup raw almonds

2-3 cups of water

vanilla extract (optional)

blender

cheesecloth/muslin/pantyhose 

What you’ll need to do:

Combine almonds and water. Let sit overnight. Blend together and pour into a jar lined with cheesecloth/muslin/pantyhose. Let this separate the milk from the leftover almond chunks. Make sure to give the cloth a good squeeze when you’re done to get as much out as you can. Refrigerate and enjoy!
