- 5 Sweet potatoes (peeled and chopped)
- 1/2 cup Almond milk
- 2 tbsp. Coconut butter
- 1 tbsp. Nutmeg
- 1 bunch Basil (puree with the olive oil)
- 2 tbsp. Olive oil
- Salt and pepper to taste
1. Add sweet potatoes to a large pot of seasoned boiling water. Cook for 25 minutes or until soft. Drain the sweet potatoes and place into a new pot.
2. Mash the sweet potato while adding in almond milk, coconut butter, nutmeg and basil. Stir until smooth and season to taste.
